I know there are a million meatloaf recipes out there and picking one can be a daunting task. My grandma Lottie was an excellent cook and it was always a family favorite when she made her meatloaf! The simple recipe was submitted to a local newspaper, published and won an award for best meatloaf recipe (this was many, many years ago). The meatloaf recipe ha been handed down through the generations and everyone in the family looks forward to making and eating the meatloaf. It is sure to please and guaranteed to leave no leftovers. The recipe is quick and easy to make.

 

Mrs. Lottie’s Meatloaf

 

Prep time: 10 minutes

 

Ingredients:

 

1 pound of ground round

½ pound of ground pork

1 package of soda crackers (saltines)

2 eggs

½ cup of diced onions

½ cup of milk

Salt and Pepper to Taste

 

Preparation:

 

Preheat oven to 350 degrees. In a large mixing bowl, combine ground round and ground pork, mix well. Add crushed soda crackers (saltines), onions, eggs, and milk. Add salt and pepper to taste. Form mixture into one large loaf. Place in a roasting pan (or meatloaf pan) and 1-2 inches of water (if using roasting pan fill pan 1/2 full with water). Bake 1 ½ hours until browned on top.
